Tangy yet sweet, this recipe combines two of the tastiest Ecuadorian-grown fruits: rich, ripe bananas and flavorful, tart limes. For the most authentic flavor, use over-ripened bananas and key limes.

Directions:

Peel the bananas, and place them in a baking dish (Pyrex 9 by 9 inches or 9 by 13 inches works well).

Spread the butter on top and around the bananas, and then pour the lime juice over them. Sprinkle the zest over the bananas, and finish by sprinkling them with sugar and cinnamon as desired.

Bake at 325 degrees for 30 minutes.
