If someone had told me three years ago that it was possible to make delicious vegan baked goods without expensive and difficult-to-find ingredients, I wouldn’t have believed him. Vegan baked goods, I thought, meant bland, carob-laced brownies and fake health food drenched in hydrogenated oil. I was wrong; I soon learned through vegan friends that it’s easy to replace eggs—most baked goods can be made vegan with a banana, applesauce, or egg replacer. I first ate these cookies at a Students for Environmental and Economic Justice (SEEJ) brunch, and as soon as I did, I was hooked on these and other vegan goodies forever. While the cookies aren’t exactly nutritious (a cup of margarine doesn’t make health food), they are some of the most delicious baked goods I have ever tasted. They are also very easy and cheap to make, and will impress at parties and dinners. Thanks to Ev Yankey for the recipe!
SEEJ Vegan Coconut Walnut Chocolate Chip Cookies
Ingredients:
3/4 cup brown sugar
3/4 cup white sugar
1 teaspoon vanilla
1 cup margarine melted
The equivalent of two eggs—half a cup of applesauce, 1 banana, or Ener-g egg replacer. (I used banana. If you use a banana, be sure to mash it before!)
2 1/4 cups white flour
1 teaspoon baking soda,
1/2 teaspoon salt
A dash of baking powder
1 cup semi-sweet chocolate chips
As much walnuts, coconut, and oatmeal as you want
Two bowls
Stirring spoon
Cookie sheet or tin foil
Procedure:
1. Preheat oven to 375 degrees
2. In one bowl, mix the vanilla, melted margarine, and the egg replacer
3. In the other bowl, mix the white flour, baking soda, salt, brown and white sugar, and baking powder
4. Combine the bowls
5. Add chocolate chips, walnuts, coconut, and oatmeal
6. Drop dollops of dough onto a greased cookie sheet or tin foil
7. Bake for around 13 minutes
8. Let cool
