1 cut-up chicken
1 head of garlic, separated without skins
2 lemons
3 Tbsp olive oil
10 Tbsp good white wine or good vermouth
Handful of fresh thyme
Fresh ground pepper, kosher salt

Put chicken in a baking pan. Sprinkle garlic cloves, one lemon cut into four pieces, olive oil, vermouth, and fresh thyme over the chicken. Throw some whole thyme sprigs on top. Sprinkle on some pepper, to taste. Place the baking pan in a preheated 320-degree oven for two hours. Approximately every half hour, try to baste the chicken to keep it moist. Remove after two hours, squeeze the second lemon over it, sprinkle on the kosher salt, and serve.
