Easy Liqueur Truffles

PUBLISHED FEBRUARY 14, 2008

What is more enticing than creamy chocolate on Valentine’s Day? The liqueur filling is optional—you can opt out by just using vanilla extract.

8 ounce cream cheese, softened
3 cup confectioner’s (powdered) sugar
3 cup semi-sweet chocolate chips
1 1/2 teaspoon your favorite liqueur

Whip cream cheese in a large bowl until smooth. Gradually add the confectioner’s sugar until well combined. Place chocolate in a microwave-safe bowl and microwave for two minutes, or until thoroughly melted, pausing to stir every 30 seconds (don’t let it burn!). Add melted chocolate and liqueur to cream cheese mixture until well blended. Shape into balls about one inch in diameter. Refrigerate for one hour. Dust with chocolate powder or confectioner’s sugar. Enjoy!
